- 2 lobsters
- 4 oz butter
- 1 1/2 cup Colombo Marsala Dry
Melt butter with marsala over medium heat in sauce pan making sure to whisk constantly until the marsala and butter is emulsified together(reserve one cup).
Preheat oven to 375 degrees.
To prepare the lobster, when ready to cook, split the lobster down the middle, crack the claws and place on a baking sheet pan. Brush with the Colombo Marsala Dry butter and place in a 375 degree oven. Cook for 8-10 minutes or until done while basting with the Colombo Marsala Dry butter every 2-3 minutes. Serve with a light salad dressed with a simple vinaigrette or olive oil and reserved Colombo Marsala Dry drawn butter.
